It probably comes as no surprise that I love anything with cheese. One of my favorites is Trader Joe's Cheddar with Caramelized Onions (priced at $8.99 a pound). It's a perfect trifecta of rich, savory and sweet flavors that melts in your mouth. Honestly, I have been caught cutting up slices and eating it plain. This cheese can be enjoyed with bread and crackers, or even as a pizza topping.
Today, I want to share a Mac & Cheese that I made using three different types of cheese: the caramelized onion cheddar, Parmesan, and another mild cheddar. The caramelized onions add a nice, unexpected touch of sweetness. The Parmesan balances out the sweet flavor so that it's not too overpowering. Since I kinda winged this meal and added extra ingredients as I found necessary, I don't have an exact recipe for you to follow. However, I do have a general guideline on how to make this scrumptious and decadent meal.

Start off by boiling the macaroni. Next, grate your cheeses (I used about equal portions of each of the three) and toss them into a saucepan on medium heat. After the cheese melts a little, add whipping cream to create the sauce. Add more whipping cream if the sauce gets too thick. Season to taste (paprika and black pepper are my go-to). After reaching a nice consistency, pour onto the macaroni! Voila!
I had originally planned to bake the macaroni and add a layer of bread crumbs, but I am super impatient, especially when it comes to food. It already looked so good that I decided to grub as is!
